What's Your Favorite Christmas Cookie?

It's beginning to taste a lot like Christmas!

And one of the best tastes of Christmas is Christmas cookies.

Some of us are spending the last days before Christmas in the kitchen, baking cookies and making other treats like chocolate bark and quick breads.

So far, I've gotten the Russian teacakes, molasses-spice cookies and cranberry-orange cookies baked. The peanut blossoms, snickerdoodles and chocolate-cherry-almond bark are still to come.

Here's an unbelievably easy "cookie": Remember-3 ingredients, at 300 for 3 minutes!
You will need waffle style pretzels (I believe Hannover makes them), a bag of Rollo's and some pecans. Be sure to use parchment or foil on your cookie sheet. Bake the pretzels with a rollo on each one for 3 min. When they come out of the oven, put a pecan on top of each rollo, and push it down just a bit. They are SO easy, and SOOO good!!! Those got my vote! Would buckeyes be considered more of a candy? They're definitely my favorite Christmas dessert at any rate. I'll be making a bunch of them on Christmas Eve!

I agree with Rachel about the Buckeyes. My mom makes them every year for Christmas and they're always great.

My aunt makes these awesome Christmas cookies where raspberry jam is sandwiched between two cinnamon sugar cookies. She puts frosting on the top with two red hot candies and paints on holly leaves. Labor intensive but soooo tasty!

Chocolate-peppermint cookies! Made them tonight for the first time and they're going to be a holiday tradition for sure! Easy and really tasty! I got the recipe from cooking.com.

Sure! Pumpkin cookies:

2.5 cup flour
1tsp baking powder
1tsp baking soda
2tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp salt
1/2 c softened butter
1 1/2 c white sugar
1cup canned pumpkin
1 egg
1tsp vanilla extract

-preheat 350
-combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt in a bowl
-cream together white sugar and butter
-add pumpkin, egg, and vanilla-beat till creamy
-mix in dry ingredients
-drop by tablespoons onto cookie sheets (the dough is really sticky, but they cook up sooo soft and chewey)
bake 15-20 minutes

Sometimes I ice them with cream cheese icing, but most the time we just eat them plain--so good both ways!

I'm a sucker for sugar cookies. Nothing beats homemade frosting! I see why everyone likes Buckeyes, but I'm not a pb fan.

My mom made the most amazing pecan-maple-bourbon balls I've ever had this year.

Easy. Peasy. Lemon. Whiskey.

Pecan Pie Truffles

2 1/2 c pecans-toasted and finely chopped
1 c graham cracker crumbs
1 c dark brown sugar
1/2 tsp. salt
2 Tb. maple syrup
1/4 c bourbon
1 tsp. vanilla
7 oz dark chocolate

Stir together everything but chocolate. Form into balls. Freeze. Melt chocolate and dip. Refidgerate until firm.
